1Heat 80g of Cooking oil in a wok over medium heat. Add the Peanuts and fry gently, stirring constantly, until they turn golden brown and become crispy. This usually takes about 5-7 minutes. Be careful not to burn them.
2Remove the Peanuts from the wok with a slotted spoon and spread them on a plate lined with paper towels to drain excess oil. Let the Peanuts cool completely to ensure maximum crispness.
3While the Peanuts cool, mince the Garlic finely and chop the Scallion into small rings.
