In a large mixing bowl, combine the 00 flour, the remaining Granulated sugar (60g from the dough portion), and the Fine sea salt. Make a well in the center.

Add the yeast mixture, the remaining Whole milk (100g), and the Eggs (100g) to the well. Begin to mix, gradually incorporating the 00 flour.
