1In a small bowl, dissolve the Fresh yeast with 10g of the Granulated sugar (from the dough portion) and 50g of warm Whole milk. Let it sit for 10 minutes until frothy.
2In a large mixing bowl, combine the 00 flour, the remaining Granulated sugar (60g from the dough portion), and the Fine sea salt. Make a well in the center.
3Add the yeast mixture, the remaining Whole milk (100g), and the Eggs (100g) to the well. Begin to mix, gradually incorporating the 00 flour.
