1Wash the Chilacayote squash thoroughly. Carefully cut it in half, scoop out and discard the seeds and fibrous strands.
2Cut the Chilacayote squash into large chunks, leaving the skin on. Place the chunks in a large pot.
3Add the Water, Piloncillo, and Mexican cinnamon stick to the pot with the Chilacayote squash.
