1Rinse 500g Glutinous rice thoroughly under cold running water until the water runs clear. Place the rinsed Glutinous rice in a large bowl and cover with cold water. Soak for at least 4 hours or preferably overnight. Drain the Glutinous rice very well before proceeding.
2Place 30g Dried shiitake mushrooms in a heatproof bowl and 20g Dried shrimp in a separate heatproof bowl. Cover both with hot water and let them soak for 30 minutes to 1 hour until softened. Reserve the mushroom soaking liquid after draining the Dried shiitake mushrooms.
3Drain the rehydrated Dried shiitake mushrooms, remove and discard the tough stems, then thinly slice the caps. Drain the rehydrated Dried shrimp.
