Soak the Mung bean vermicelli in hot water for 15-20 minutes until softened but still firm to the bite. Drain thoroughly and cut into shorter segments if desired.

Heat a wok over high heat until smoking. Add Vegetable oil, then add the Ground pork. Stir-fry, breaking it apart, until browned and cooked through, about 3-4 minutes. Remove the cooked Ground pork from the wok and set aside, leaving about 10g of oil in the wok.

Add the white parts of the Scallions, minced Garlic, and minced Ginger to the wok. Stir-fry for 30 seconds until fragrant.
