1Place the desalted baccalà in a large pot and cover with cold water. Bring to a gentle simmer over medium heat and cook for about 15-20 minutes, or until the baccalà flakes easily. Do not boil vigorously.
2While the baccalà cooks, place the peeled Potatoes in another pot, cover with cold water, add a pinch of Fine sea salt, and bring to a boil. Cook until the Potatoes are very tender, about 15-20 minutes.
3Carefully remove the cooked desalted baccalà from the water and let it cool slightly. Discard any skin and bones, then flake the desalted baccalà into small pieces.
