1Gently clean the Termite mushrooms by brushing off any dirt and trimming tough stem ends. Do not wash excessively to preserve their delicate flavor. If the mushrooms are large, tear them into bite-sized pieces along their natural grain.
2Slice the Garlic thinly. Peel and slice the Ginger into thin matchsticks. Cut the Scallions into 3 cm segments, separating the white parts from the green parts.
3Heat a wok over high heat until it begins to smoke lightly. Add the Vegetable oil to the wok.
