1On a clean work surface, combine the Buckwheat flour, 00 flour, and 2 grams of Fine sea salt. Form a mound and create a well in the center.
2Crack the Large eggs into the well, then add the Water. With a fork, gently whisk the eggs and water, gradually incorporating the flour from the inner edge of the well.
3Once a shaggy dough forms, begin kneading by hand for 10-12 minutes until the dough is smooth, elastic, and no longer sticky.
