1Rinse the pork belly thoroughly and cut it into large, manageable pieces (approximately 5x5 cm).
2Place the pork belly in a large pot and cover with water. Add 15 grams of the salt to the water.
3Bring the water to a boil, then reduce heat to medium-low and simmer the pork belly for 60-90 minutes, or until it is very tender when pierced with a fork. Drain the pork belly and let it cool completely.
