1Prepare the boiling aromatics: Roughly slice the Korean radish, roughly chop the large stalks of green onion, peel the whole cloves of garlic, and slice the ginger.
2In a large pot, combine the Water, sliced Korean radish, chopped green onion, peeled garlic, sliced ginger, Whole black peppercorns, and the 30g of Doenjang. Bring the mixture to a rolling boil over high heat.
3Add the Soju to the boiling liquid, then carefully place the Pork belly into the pot. Once the liquid returns to a boil, reduce the heat to a gentle simmer.
