1Bring 500 grams of water to a boil in a pot. Add the small sago pearls and cook for 10-12 minutes, stirring occasionally, until most pearls are translucent with a tiny white dot in the center.
2Remove the pot from heat, cover, and let the small sago pearls sit for another 5 minutes until fully translucent. Drain the small sago pearls and rinse under cold water to prevent sticking. Set aside.
3Peel and dice the 800 grams of ripe mango. Reserve about 200 grams of diced mango for garnish.
