1Toast the Cacao beans in a comal or dry skillet over medium heat for 5-7 minutes, stirring frequently, until fragrant and the skins begin to loosen. Remove from heat and let cool slightly.
2In a separate dry skillet, lightly toast the White rice over medium-low heat for 3-5 minutes until slightly golden, taking care not to burn it.
3Place the toasted White rice in a bowl and cover with 1 liter of fresh water. Let it soak for at least 4 hours, or preferably overnight, to soften.
