1To prepare the broth, combine Water, Dried anchovies, and Dried kelp in a large pot. Bring to a boil over high heat, then reduce heat and simmer for 15 minutes. Remove and discard the Dried anchovies and Dried kelp.
2Slice the Napa cabbage into 5cm pieces. Slice the Green onion diagonally. Slice the Onion thinly. Slice the Carrot into thin half-moons. Slice the Zucchini into thin rounds. Slice the Firm tofu into 1cm thick rectangles.
3Clean and trim the Shiitake mushrooms, Enoki mushrooms, Oyster mushrooms, and King oyster mushrooms. Slice the King oyster mushrooms lengthwise into thin strips.
