Prepare the vegetables: Peel the Potatoes and cut them into large, bite-sized chunks. Soak the Potato chunks in cold water for 10 minutes, then drain thoroughly. Peel the Onion and cut it into thick wedges. Peel the Carrot and cut it into thick rounds or half-moons. Trim the ends of the Green beans.

In a large pot or deep skillet, heat the Vegetable oil over medium-high heat. Add the Thinly sliced beef and cook until browned, breaking it apart with a spoon.

Add the Onion, Carrot, and Fresh ginger to the pot with the beef. Sauté for 5-7 minutes until the Onion softens and becomes translucent.
