1Slice the Fish fillets into bite-sized pieces, about 1 cm thick.
2In a bowl, combine the Fish fillets with 15g Shaoxing wine, 10g Light soy sauce, White pepper, 20g Corn starch, and 5g grated Ginger. Mix well and let marinate for 15-20 minutes.
3In a small bowl, whisk together Chicken broth, 15g Light soy sauce, Chinkiang vinegar, and Sugar. Set aside.
