1. Rinse Chana Dal thoroughly and soak in water for at least 30 minutes.
2. Cut Potato, Pumpkin, Cauliflower, Eggplant, and Green Beans into 2-3 cm pieces. Roughly chop Spinach.
3. Heat Mustard Oil in a large pan or kadai over medium heat.
