1Thoroughly clean the Blue crab under cold running water using a brush to remove any dirt. Carefully remove the apron (triangular flap) from the underside and discard. Gently lift the top shell and remove the gills and any visible internal organs, leaving the roe if present. Rinse again and drain well. Place the cleaned Blue crab in a clean, airtight container.
2Prepare the marinade base: In a large pot, combine Water, Soy sauce, Sugar, Garlic, Ginger, Dried kelp, Dried shiitake mushrooms, Jujubes, and Ginseng. Bring the mixture to a boil over medium-high heat.
