Rinse the Dried Borlotti beans thoroughly and soak them in cold water for at least 12 hours, or overnight. Drain and rinse again before use.

Place the soaked Borlotti beans in a large pot, cover with fresh water (approximately 1.5-2 liters), and add the Bay leaf. Bring to a boil, then reduce the heat to a gentle simmer and cook for 60-90 minutes, or until the Borlotti beans are tender. Drain the Borlotti beans, reserving some of their cooking liquid, and discard the Bay leaf.
