1Rinse the Azuki beans thoroughly and soak them in a large bowl of cold water overnight, or for at least 8 hours.
2Drain the soaked Azuki beans and place them in a large pot. Add fresh water to cover the beans by about 5 cm. Bring to a boil over high heat, then reduce heat to medium-low and simmer for 10 minutes. Drain the beans again.
3Return the drained Azuki beans to the pot. Add fresh water to cover the beans by about 5 cm once more. Bring to a boil, then reduce heat to low, cover, and simmer for 60-90 minutes, or until the Azuki beans are very soft and can be easily crushed between your fingers.
