1Place the Chicken pieces in a large pot with 100 grams of White onion, 15 grams of Garlic cloves, and 5 grams of Salt. Add the Water and bring to a boil. Reduce heat and simmer until the Chicken pieces are cooked through and tender, about 45 minutes. Remove the Chicken pieces and set aside. Strain the broth and reserve 1000 grams of chicken broth.
2In a dry skillet or comal, toast the Raw pumpkin seeds over medium heat, stirring constantly, until they puff slightly and turn light golden, about 5-7 minutes. Be careful not to burn them. Set aside.
3On a comal or baking sheet, roast the Tomatillos, Serrano chiles, remaining 100 grams of White onion, and remaining 15 grams of Garlic cloves until softened and slightly charred. This can take 10-15 minutes.
