1Thoroughly wash the Limes. Cut the Limes in half and extract all the juice using a citrus juicer. Strain the lime juice through a fine-mesh sieve to remove any pulp or seeds.
2In a large pitcher or container, combine the strained lime juice and 500g of Water. Add the finely chopped Piloncillo to the mixture.
3Stir vigorously until the Piloncillo is completely dissolved. This may take a few minutes. If the Piloncillo is stubborn, you can warm a small portion of the water to dissolve it first, then add it back to the cold mixture.
