1In a large, heavy-bottomed pan, bring Milk to a rolling boil over medium-high heat, stirring occasionally to prevent scorching.
2Reduce the heat to medium and continue to cook the Milk, stirring frequently, until it reduces to about half its original volume and thickens slightly.
3Dissolve Citric Acid in 10 grams of water. Add this Citric Acid solution to the reduced Milk and stir gently for a minute. The Milk will curdle slightly, forming small granules.
