1Heat a heavy-bottomed pan over medium heat and dry roast the semolina for 5-7 minutes until it turns aromatic and lightly golden. Transfer the roasted semolina to a plate and set aside.
2In the same pan, add ghee over medium heat. Once the ghee is hot, add mustard seeds and allow them to splutter.
3Add urad dal and chana dal to the pan. Sauté until the dals turn golden brown.
