1Carefully clean the prickly pear fruit, removing any remaining spines. Peel the prickly pear fruit using a knife, discarding the peels.
2Chop the peeled prickly pear fruit into smaller pieces and place them in a large, clean bowl. Mash the prickly pear fruit thoroughly with a potato masher or clean hands until a pulpy consistency is achieved.
3Strain the mashed prickly pear fruit through a fine-mesh sieve or cheesecloth into a large, clean fermentation vessel, pressing firmly to extract as much juice as possible. Discard the seeds and pulp.
