1Rinse 200g Azuki beans thoroughly under cold running water.
2Place the rinsed Azuki beans in a large pot and add enough water to cover them by at least 5cm. Bring to a boil over high heat, then boil for 5 minutes. Drain the Azuki beans and discard the boiling water. This process is called aku-nuki, removing bitterness.
3Return the blanched Azuki beans to the clean pot and add 1500g fresh Water. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the Azuki beans are very soft and easily crushed between your fingers. Add more Water if necessary to keep the beans submerged.
