1Bring a large pot of water to a rolling boil. Add Fresh egg noodles and cook according to package instructions until al dente. Drain immediately, rinse with cold water to prevent sticking, and toss with a small amount of Vegetable oil. Set aside.
2In a bowl, combine Shrimp, Squid, Scallops, 5g Shaoxing wine, 0.5g White pepper, and 5g Cornstarch. Mix well and set aside to marinate for 10 minutes.
3Prepare the stir-fry sauce by combining Light soy sauce, Dark soy sauce, Oyster sauce, the remaining 15g Shaoxing wine, Chicken stock, the remaining 0.5g White pepper, and the remaining 5g Cornstarch in a small bowl. Whisk until smooth.
