1Rinse the Dried black beans thoroughly and place them in a large bowl. Cover with plenty of cold water and let them soak overnight, or for at least 8 hours.
2Drain the soaked Dried black beans and transfer them to a large pot. Add 50g of the White onion, 10g of the Garlic cloves, and the Fresh epazote. Cover with fresh water (about 1.5 liters).
3Bring the Dried black beans to a boil, then reduce heat to a simmer. Cook for 1 to 1.5 hours, or until the Dried black beans are very tender. Add 5g of the Fine sea salt during the last 15 minutes of cooking.
