1Rehydrate the Dried shiitake mushrooms in hot water for 30 minutes, then squeeze dry and slice thinly. Prepare the Pork shoulder by slicing it thinly and marinating with 10 grams of Light soy sauce, 5 grams of Shaoxing wine, 1 gram of White pepper, and 3 grams of Sesame oil for 15 minutes.
2Heat a wok over high heat until smoking. Add 20 grams of Peanut oil, then add the minced Garlic and minced Ginger. Stir-fry for 15 seconds until fragrant.
3Add the marinated Pork shoulder to the wok and stir-fry until it is mostly cooked through and lightly browned, about 2 minutes. Remove the Pork shoulder from the wok and set aside.
