1In a large mixing bowl, combine the All-purpose flour with the Hot water. Stir with chopsticks until shaggy, then gradually add the Cold water and mix until a rough dough forms.
2Transfer the dough to a clean surface and knead for 8-10 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for at least 30 minutes at room temperature.
3While the dough rests, prepare the ghee paste. Gently melt the Ghee in a small saucepan or microwave until liquid. Stir in the Salt until well combined.
