1To prepare jalebi batter, combine maida, sour yogurt, 100 grams of water (for jalebi batter), and 1 gram of baking soda (for jalebi batter) in a bowl. Whisk well to a smooth, lump-free consistency. Cover and let it ferment at room temperature for at least 2 hours.
2To prepare sugar syrup, combine sugar and 150 grams of water (for sugar syrup) in a saucepan. Bring to a boil, stirring until sugar dissolves. Add saffron strands and green cardamom powder. Simmer for 5-7 minutes until the syrup reaches a one-string consistency. Stir in lemon juice and keep the sugar syrup warm.
3To prepare fafda dough, in a large bowl, combine besan, urad dal flour, 2 grams of baking soda (for fafda dough), asafoetida, carom seeds, black pepper powder, turmeric powder, and salt.
