1Prepare the piloncillo-ancho-cinnamon syrup: In a small saucepan, combine 50 grams of water with the piloncillo, ancho chile, and Mexican cinnamon stick. Bring to a simmer over medium heat, stirring until the piloncillo is fully dissolved. Remove from heat and let it cool completely, allowing the flavors to infuse. Strain the syrup to remove solids and set aside.
2Prepare the glass: On a small plate, spread the fine sea salt. Take a chilled beer glass and moisten the rim with a lime wedge. Invert the glass onto the fine sea salt, twisting gently to create an even salted rim.
3Assemble the drink: Into the prepared glass, add the Fresh Lime Juice, Hot Sauce, Maggi Seasoning, and 30 grams of the prepared piloncillo-ancho-cinnamon syrup.
