Whip 404g cold heavy cream to stiff peaks in a large bowl.

Chop 170g dark chocolate into small pieces and melt over a double boiler, stirring until smooth.

In a separate bowl, whisk 99g egg whites with 113g sugar and 1g salt until stiff peaks form.
