1Slice open the Ancho, Guajillo, and Chile de arbol chiles to remove and discard all seeds and fibrous veins.
2Dry-roast the chiles, tomatillos, onion, and garlic cloves on a hot skillet until charred and blistered.
3Blend the charred ingredients with water, vinegar, piloncillo, cumin, oregano, salt, and pepper until smooth.
