1Rinse the Pork ribs thoroughly under cold running water. Place the Pork ribs in a large pot and add enough cold Water to cover them. Bring to a boil over high heat.
2Once boiling, skim off any foam or impurities. Add 20 grams of Shaoxing wine and continue to boil for 5 minutes. Drain the Pork ribs and rinse them again with warm water to remove any remaining scum.
3In a separate large soup pot, combine the blanched Pork ribs, Lotus root, and Ginger slices. Add the remaining 30 grams of Shaoxing wine and the 3000 grams of Water.
