1Soak the red beans in water overnight, for at least 8 hours.
2Drain the soaked red beans, then place them in a pot with fresh water (about 3 times the volume of beans). Bring to a boil, then reduce heat and simmer until the red beans are very tender, about 40-60 minutes.
3Drain the cooked red beans. Mash the red beans roughly with a potato masher or fork, leaving some texture.
