1Carefully remove the papery husks from all Hozuki (Ground Cherries). Gently wash the Hozuki (Ground Cherries) under cold running water and pat them dry with a clean cloth.
2Bring a small pot of water to a boil. Blanch the prepared Hozuki (Ground Cherries) for 30 seconds, then immediately transfer them to an ice bath to stop the cooking process. Drain well.
3In a separate saucepan, combine the Water, Rice Vinegar, Granulated Sugar, and Sea Salt. Add the Kombu to the liquid.
