1Clean the Squid thoroughly, removing the internal organs, beak, eyes, and outer membrane. Score the inside of the squid body in a crosshatch pattern, then cut into bite-sized pieces. Slice the tentacles into manageable sections.
2In a bowl, combine the cleaned Squid with 20g Shaoxing wine, 20g light soy sauce, 1g White pepper, and 10g Cornstarch. Mix well and marinate for 15 minutes.
3Slice the Celery diagonally into 0.5cm thick pieces. Mince the Garlic and Ginger. Separate the white and green parts of the Scallion; slice the white parts and chop the green parts.
