1. Prepare the syrup: In a saucepan, combine 1000 grams of Granulated sugar and 800 grams of Water. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 15 minutes. Add 15 grams of Lemon juice and continue to simmer for another 2 minutes. Remove from heat and let the syrup cool completely to room temperature.

2. Prepare the semolina cream: In a separate saucepan, combine 500 grams of Milk, 70 grams of Fine semolina, and 30 grams of the 50 grams of Butter (reserve 20 grams for later). Cook over medium heat, stirring constantly with a whisk, until the mixture thickens to a pudding-like consistency. Remove from heat, transfer the semolina cream to a shallow dish, and cover its surface directly with plastic wrap to prevent a skin from forming. Let it cool completely in the refrigerator until firm.

3. Preheat your oven to 170°C (340°F). Gently melt the 300 grams of Clarified butter in a small saucepan or microwave-safe bowl.
