1Place the Dogfish in a large pot and cover with cold water. Add 5 grams of Fine sea salt, the White onion, Celery stalk, Bay leaf, and Black peppercorns.
2Bring the water to a gentle simmer over medium heat and cook the Dogfish for 10-12 minutes, or until the flesh is opaque and flakes easily. Do not boil vigorously.
3Carefully remove the Dogfish from the pot and let it cool completely on a plate. Discard the cooking liquid and aromatics.
