Tiramisù with Amaretti Cookies

Whisk 6 egg yolks with 85g sugar until pale and fluffy, approximately 3–4 minutes.

Fold 600g mascarpone into the egg mixture gently until smooth and no lumps remain.

Stir 44g dark rum and 1g salt into the mascarpone cream until combined.
