Tiramisù with Amaretti Cookies

Whisk 6 egg yolks with 85 g sugar until pale and creamy, about 3 minutes.

Fold 600 g mascarpone and 1 g salt gently into the egg mixture until smooth.

Combine 200 g strong espresso with 44 g dark rum in a shallow bowl, then cool slightly.
