1Cut the Pork belly into 3-4 cm cubes. Bring a pot of Water to a boil, add the Pork belly, and blanch for 5 minutes. Drain and rinse the Pork belly under cold water to remove any scum. Set aside.
2Heat Cooking oil in a wok or large pot over medium-high heat. Add the blanched Pork belly and sear until lightly browned on all sides, rendering some of the fat.
3Add the sliced Ginger, smashed Garlic, and roughly chopped Scallions to the wok and stir-fry for 1 minute until fragrant.
