1Combine the shredded Pork tenderloin with 15g Shaoxing wine, 10g Light soy sauce, 10g Corn starch, White pepper, and Sesame oil in a bowl. Mix well and marinate for 15 minutes.
2Rehydrate the Wood ear mushrooms if dried, then shred them. Shred the Bamboo shoots, Green bell pepper, and Carrot.
3Mince the Garlic and Ginger. Separate the white parts of the Scallion from the green parts; slice both.
