1Rinse Urad dal thoroughly and soak it in 500g of water for at least 4 hours, or preferably overnight.
2Drain the soaked Urad dal completely. Grind the Urad dal with 10g of Green chili and 15g of Ginger to a very smooth, thick, and fluffy batter, adding minimal water if necessary (about 50g from the 200g water for yogurt).
3Transfer the Urad dal batter to a bowl. Add 5g of Cumin seeds, 1g of Asafoetida, 10g of Fresh cilantro (finely chopped), and 5g of Salt. Mix well, beating the batter for 5-7 minutes to incorporate air, making it light and fluffy.
