1Thoroughly clean the Whole duck, remove any excess fat, and pat it completely dry with paper towels, inside and out.
2In a small pan, dry-roast 20 grams of Sichuan peppercorns and the Dried chili flakes over medium heat until fragrant, about 2-3 minutes. Grind them into a coarse powder.
3Combine the ground Sichuan peppercorns, Dried chili flakes, Salt, and Shaoxing wine to create a spice rub.
