1Carefully peel the Deodeok under running water to minimize contact with its sticky sap. Slice the peeled Deodeok lengthwise into pieces approximately 0.5 cm thick.
2In a bowl, combine 1000 grams of Water and 5 grams of Salt. Submerge the sliced Deodeok in this salted Water and let it soak for 20 minutes to remove bitterness.
3Drain the Deodeok thoroughly and pat dry with a clean cloth. Place each piece of Deodeok between two sheets of plastic wrap or in a plastic bag and gently pound with a mallet or the back of a knife until flattened to about 0.2-0.3 cm thick. This tenderizes the Deodeok and helps it absorb the marinade.
