1. Prepare the beef short ribs: Rinse the beef short ribs under cold water. Place them in a large bowl and cover with cold water. Let them soak for 30 minutes to 1 hour, changing the water once or twice, to draw out excess blood. Drain thoroughly and pat dry with paper towels. Score the surface of each beef short rib lightly in a crisscross pattern to help absorb the marinade.

2. Prepare the marinade base: In a blender, combine the Asian pear and yellow onion. Blend until very smooth. Strain the mixture through a fine-mesh sieve, pressing firmly to extract as much liquid as possible. Discard the solids.

3. Mix the marinade: In a large bowl, combine the strained Asian pear and yellow onion juice with soy sauce, white sugar, mirin, sesame oil, minced garlic, and minced ginger. Add black pepper and whisk until the white sugar is fully dissolved.
