1Preheat the oven to 275°F (135°C). In a big, enameled cast-iron pot, combine the rabbit, hare, bacon, veal trotter, carrots, celery, bouquet garni, wine, and brandy. Season with salt and pepper and add water to reach 1 inch (2.5 cm) below the top of the meats.
2Cover the pot, place in the oven, and bake for 9 hours, or until the meats begin to fall apart. Check the water level every now and again and add more water if it begins to drop.
