1Prepare the vegetables: Peel and finely chop the yellow onion. Peel and dice the potatoes into 1.5 cm cubes. Shell the fresh fava beans and fresh peas. Clean the artichoke hearts, remove any choke, and quarter them.
2In a large, heavy-bottomed pot or Dutch oven, heat the extra-virgin olive oil over medium heat.
3Add the chopped yellow onion to the pot and sauté gently until translucent and softened, about 5-7 minutes. Ensure the onion does not brown.
